centuries, honey was the world's major sweetener. Ever since the
caveman stole his first sweet taste, honey has formed part of
mankind's cultural traditions. In past civilizations, honey was
offered to the gods, used to pay taxes and came to be used in
special dishes, many of which are still enjoyed today.
Even though they
no longer describe honey as "dew, distilled from the stars
and the rainbow", modern cooks still have a high regard for
;honey because of the rich, delicate flavour it adds to our
cooking and baking.
Although honey
has greater sweetening power than sugar, it can be substituted
for the same amount of sugar. When 1 cup of sugar is
replaced by 1 cup of honey, the additional liquid
called for in the recipe should be reduced by 1/4 cup to
allow for the natural moisture of honey. In baking, add 1/2 teaspoon) of baking soda for every cup of honey used.
When following a recipe calling for sugar, reduce oven temperature
(25oF
when replacing sugar with honey in baked goods.
