Chicken
2 frying
chickens, cut up
1/4 cup honey
1/4 cup soy sauce
1/4 cup lemon juice
1/2 cup ketchup
1/4 cup lemon juice
Arrange chicken
pieces in a single layer in a large baking dish. Mix honey, soy
sauce, ketchup and lemon juice. Pour over chicken pieces. Allow
chicken to stand in marinade several hours or overnight.
Cover pan with
foil and bake in a 325oF oven for 1 hour. Remove
foil; sprinkle chicken lightly with salt; baste with sauce. Return
to oven and bake uncovered until tender. Serve over rice.
